Grant’s And Bricco Holding Turkey Drive

Billy Grant, owner of Grant’s Restaurant in West Hartford, Restaurant Bricco in West Hartford and Bricco Trattoria in Glastonbury, is teaming up with Foodshare to help donate turkeys to families in need this Thanksgiving season. For a donation of $20 delivered to any of the three restaurants, a turkey will be donated in your name.

Grant visited the Fox CT kitchen to promote the turkey drive and also to prepare an easy dish you can add to your Thanksgiving dinner: spiced pumpkin soup. The recipe is below.

Ingredients:

  • 2 15-ounce cans of canned pumpkin puree
  • 4 to 6 cups of vegetable stock or canned chicken broth
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 2 tablespoons honey
  • 1 tablespoon real maple syrup
  • 2 tablespoons apple butter
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Cranberries and toasted pumpkin seeds for garnish

Preparation:

  1. Put pumpkin puree in large sauce pan.
  2. Whisk in the cups of stock with honey and apple butter and simmer.
  3. add spices and simmer for 20 minutes.
  4. Whisk in more stock if soup gets too thick.
  5. Remove from heat and season with salt and pepper.
  6. Add sour cream and real maple syrup.
  7. Serve and garnish with toasted pumpkin seeds and cranberries.
