CONNECTICUT, USA — This aguachile dish is a fantastic example of how Mexican food is more than just what people think and has healthy options rich in bright, fresh, and bold flavors!
Puerto Vallarta has eight locations in the state: Avon, Danbury, Fairfield, Middletown, Newington, Orange, Southington, and Stamford.
Ingredients:
12 peeled raw shrimp
1 cucumber
1/4 sliced red onion
1/2 green apple
For 4 oz of aguachile sauce:
1 jalapeno pepper
1/2 of a cucumber
2 oz of lime juice
10 cilantro leaves
Salt and pepper to taste.
Tostones (fried plantanes)
Instructions
Slice the shrimp in half horizontally and set them aside.
Place all the sauce ingredients in a blender, straining it afterward. Add the salt and pepper to taste.
Place sliced shrimp in a bowl. Pour the sauce over it to cover it evenly, and let it marinate for 20 minutes.
Slice the cucumber thinly.
Slice the red onion thinly.
Cube the green apple.
Stack the shrimp, cucumber, and red onion in a round food ring.
Release the food ring.
Pour the sauce and green apple over the tower and enjoy!
